Today was simple burrito, comfort food day:
* 1 can of Bush vegetarian baked beans, heated to boiling witih 1/2 tsp red pepper powder
* a BIG handful (read: 1/2 the package) of fresh spinach, sauteed down in a tablespoon of olive oil.
* whole wheat tortillas
* shredded cheese (the sharper, the better)
Add warm beans, spinach, and cheese on top of a hot tortilla and enjoy. Better with garlic in the spinach.
