Do you make your own burritos? If so, what is your fave recipe?

If not, where do you buy? Why buy?

    Plato's Burro's
    ('cause "burrito"'s are too SMALL...)
    - for 2/4 people:
    ( all measurements are approximate)

    8 big assed flour tortillas(12" is too small, but if one must...)
    3-4 green chiles(your pick on hot , but i like hot)
    1 lb shrimp(peeled deveined and tails removed)
    Cilantro
    green onions/chives
    3-4 limes
    2 Tbs Mayonaise
    2 Tbs sour cream
    2-3 oz grated cheese( your choice, but keep your ingredients in mind, stilton kinda overpowers the rest...)
    1 tbs cumin
    1 tbs garlic powder
    1 tbs onion powder
    1 tbs chipotle chile powder
    1 large tomato( garden- store tomatos suck)
    2-3 tomatillo's
    1-2 cups shredded cabbage
    fire up the smoker( don't have one?..get one )with mesquite wood(or suitable sub.) roast green chilles over open fire to blacken skin. remove blackened skin. smoke chiles for at least 1 hour.
    Skewer shrimp ( two skewers with shrimp as ladder rungs) combine onion, garlic,cumin, and chipotle powders in med bowl, add juice and zest from 1/2 lime marinade the shrimp in mixture.
    start up (CHARCOAL!...NOT GAS OR ELECTRIC) grill to operating temp. roast green onions at high heat until wilted and slightly translucent.
    chop green onions, a good sized hadfull of cilantro, and all of the green chilies that have been smoking. put into Medium bowl. add all the rest of your lime juice and at least 1 limes worth of zest. add mayo and sour cream. blend to emulsion. this will be the salsa.
    grate cheese, chop tomato and tomatillos, put each into small bowls.
    On a HOT grill , cook the marinated shrimp. hot and short! no more than 5 min( that is a very long time in shrimp cooking, most people will be done in 1-2 minutes!...)just cook them pink...
    when shrimp are done plate the skewers and have tortillas ready near grill.
    call everyone to dinner, and warm tortillas on grill ( 5-10 seconds per side, assuming the grill is still hot as hell) take first tortilla and and demonstrate the method of burro construction- with tortilla in hand take a skewer of shrimp in free hand, place in hand with tortilla, pull skewers while holding them in tortilla with other hand. shrimp are now held in tortilla. Plate tortilla and add salsa, cheese, tomato/tomatillo, and cabbage. wrap into Burro configuration. give each guest a tortilla as it warms. they should be familiar enough with the idea by now to finish the meal...
